Dating a student is a professional breach of trust, and one that adversely effects the integrity of the entire educational institution. As Professor X notes, a professor has a potential teacher-student relationship with students at a university, not just those in his or her classes.
Dating a student who happens not to be in one of those classes is what lawyers call “a distinction without a difference.” Many students and professors will reasonably assume that the pairing arose out of the student-teacher relationship, and in some ways it almost certainly did.

But why is it such a big deal when a prof becomes involved with a student who will never be his student again?

She seems mature and responsible, despite the fact that many are not at 19 or 20. Now, It IS OUT of the question to even considering anything while shes still a student. Technically, you could have lunch with her after graduation, but I wouldn't do anything more with her until more time as gone by.
There is that boundary between students and teachers. 27 and 19 is a big age difference, but like I said she seems more mature. Students frequently develop crushes on their teachers. If you truly like her, keep it a platonic friendship for at least a year and make sure it's not just a light student-teacher crush.
"The days of reckoning are arriving for these types of behaviors," said Daniel Prywes, a Washington-based lawyer who specializes in academic human resource issues.
"But on the other hand, under no circumstances can consenting adults be absolutely prohibited from having a romantic relationship." Students are adults, and professors – especially at a public school – may claim a ban is a violation of their civil rights, he said.
